Last week I received my pre-ordered copy of Egg, A Culinary Exploration of the World’s Most Versatile Ingredient by Michael Ruhlman.
This book is much more than a cookbook, it is the epitome of all things egg. I have read it like a novel, taking it to bed with me at night. I just love this book. It has over 100 recipes, photographs, egg cooking techniques, and a cool egg flow chart. One of the recipes in Michael’s book that I kept going back to is Eggs Benedict. I decided to try the classic version from Egg and maybe branch out from there with other versions, perhaps even a Lobster Benedict.
I don’t have permission to copy Michael’s recipe so I’ll just tell you about this dish.
It starts with a hollandaise sauce made easy in a blender. A toasted English muffin gets topped with Canadian bacon, thinly sliced ham, a poached egg, and hollandaise sauce. In Egg, Michael shares a secret for perfectly poached eggs. I have been obsessed with it and have poached eggs nearly every day since the book arrived. This tip alone is worth the price of the book! I like my eggs every which way! I love, love, love eggs benedict, but have never been brave enough to try it at home, maybe if I win the book I’ll get brave! We have chickens and Indian Runner ducks. We have an incubator loaded with 9 duck and 15 chicken eggs. We have 7 white rock and one barnyard mix chicks, and four goslings in two separate brooders. We darned well _better_ like eggs! Oh and the remains of a 20 lb holiday ham in the fridge, so I think I can find a gluten -free way to do up some Benedict for brekkies tomorrow.
