I am done with pickling! I pickled fifteen quarts of kosher dills today, several pints of bread and butter pickles and some pickled onions. I started a recipe for Seven Day Sweet Pickles. You cover the cukes with boiling water everyday for 5 days then make the brine and in 7 days they are ready to can. I have never done this before. We’ll see how it goes. Amongst the requests for “pickled this or pickled that.” Michael requested sweet pickles. At least all I have to do for five days is boil water. I cleaned my stove, sink, and mopped the pickle juice from my kitchen floor. The canning pot and utensils are stored away and the odor of vinegar is starting to dissipate, although Michael thinks it might have permeated the walls. I was canning kosher dills at 3:00 a.m. this morning! But here is what I have to show for my effort. (please ignore the Oreos)
So it is official. I am done pickling and have lots of jars to share with family and friends. But, here’s a little dilemma. My neighbor wanted some Icelandic chickens to compliment her Icelandic horses. I took her two lovely little laying hens that she named Luna and Negra. She repaid the favor by sending me home with a huge bag of tiny bosc pear and asian pears. Wouldn’t it be cute to make spiced pears and just put one single pear in a pretty little jar tied with raffia. I could use them as place cards at my barbecue on Wednesday. It’s not really pickling, more like canning. Hmmm, I’ll have to give this some thought. In the meantime, I am enjoying the occasional plinking sound as the last of my jars seal in the pantry. I need sleep.

The pickles are sooo god Mom. If I dont go and hide them I will need another jar. Out of Site out of mind right. But they are soo good.
