It’s Fall. It’s autumn. That means it is apple harvest time! That means applesauce, apple pie, apple crisp, apple muffins, etc. The best part is eating the apples and all the lovely things you can make with them. The worst part is peeling, coring and slicing the apples. There is a wonderful little tool that can help you with the task of preparing apples for cooking. It peels, cores, and slices the apples for you all at the same time. There are many models of apple peelers out there. All you need do is google the term “apple peeler.” I had one many, many years ago but it was more trouble than it was worth. It is the type that clamps onto the edge of the kitchen counter top. It never fit well and frequently fell off during use. When I did get it on securely, it sat so close to the edge of the counter that the peels and juice ended up on the floor. I spent the next forty years peeling coring and slicing apples by hand until I saw an apple peeler in the store with a vacuum base on it. You can place it well away from the edge of the counter top. I had to have it. I have used it three times and it works like a charm. You just push the apple onto the spikes and turn the handle. It peels, cores and spiral slices the apples in one fell swoop.
Last week I peeled enough apples in just a few minutes to fill a large saucepan. Less than an hour later I had a pot of beautiful applesauce. If you love cooking with apples you simply must have one of these handy little wonders. Take my advice though, get the vacuum base model.

And, the chicken LOVE the peels. They run all over the yard chasing each other.
