I threw this together with leftover pork carnitas and stuff I had in the fridge and pantry.
In my pantry I had a box of Thai Lemongrass/Ginger rice, a bottle of Guy Fieri Pacific Rim BBQ & Wok sauce. In the fridge I had leftover pork, cooked carnitas style, cilantro, avocado, and burrito sized flour tortillas.
I first cooked the rice. I have to admit that I was a little fearful of the lemongrass/ginger seasoning so I only put half the packet in. Now I am glad I did because I have the other half to ad to the next rice I cook. It was delicious!
I warmed the pork in the microwave. I know, horrors! I then warmed the tortillas in a tablespoon of vegetable oil in a hot skillet. I started the Thai burrito by laying down a layer of the pork, followed by the rice, then garnished with chopped cilantro and sliced avocado. I finished the burrito by pouring the Wok sauce down the middle. The burritos were folded and cut diagonally and served with extra sauce.
I took a burrito upstairs to Michael where he was working on his computer. I didn’t wait for him to taste it, sure he would hate it. I retreated back down the stairs. No sounds came from upstairs for quite some time. Finally my curiosity got the better of me and I went up to check. The plate was empty. I asked how he liked it and Michael said, “It was the bomb.” Wow, shocking. He said he didn’t know what it was but he took the first bite and loved the flavors. Unbelievable. The sauce was hot and there were green things in it, and Michael still liked it. I really enjoyed the burritos but I thought the rice was the standout. I will serve it again.

- 1 cup pulled pork
- Thai Lemongrass/ Ginger rice
- 1/4 cup chopped cilantro
- 1/2 avocado sliced
- Guy Fieri Pacific Rim BBQ sauce
- 4 burrito sized flour tortillas
